THE KNIVES
The knife is the oldest tool in a chef's armoury - older even than the management of fire, by somewhere between a million and two million years. Even at the earliest stages of human tool making, man was not randomly slashing at his food, but making careful decisions about which cuts to make with which tools. Knives are often our primary interaction between ourselves and our food - It is with this in mind that Cut Throat Knives are designed to enhance the cooking experience.

In a world of increasingly disposable, valueless items, where homes and garage sales and superstores are packed with mediocre pieces that are bought, used, and ignored, what could be more important than learning once again to value what we buy, and feel a connection to the people who create around us?
We strive to achieve two things with every knife we make. Firstly, that each knife is made with the utmost quality and integrity; and secondly, that each knife will go on to bring a lifetime of service and culinary enjoyment.

8" Chef
The Chef is designed as a multi purpose kitchen knife. With practice and good technique the Chef can be used for practically any kitchen task there is.​

It features a gentle belly for excellent rock chopping and slicing, a fine tip for precise work and is balanced right at the heel of the blade so that there is not loss of power in the cut.
The spine and the choil have been crowned to ensure that the blade feels comfortable for prolonged work in the kitchen.

9½" Sabatier
A homage to French Knife making, the Sabatier is the kitchen workhorse. It is adept at all kitchen tasks but excels when it comes to heavy duty work. Cutting and carving are the domain of this tool.

The cutting edge is gently curved so that it can easily manuveaur between slicing and rock chopping. The handle sits at 5.5 inches long so works perfectly for those with larger hands.
While the blade is longer the balance and geometry ensure that it never feels unwieldy.

The 4 inch Paring Knife is the kitchen scalpel. Made for precision, it excels hulling strawberries, deveining shrimp and peeling apples.
